Zucchini Banana Oat Bread (low(er) Carb) Recipe

Ingredients
  • 1/2-3/4 c raisins (optional) or nuts (optional) or chocolate chips, are (optional) .
  • 2 c quick-cooking rolled oats .
  • 3 c whole wheat flour .
  • 3 c grated zucchini .
  • 1 tsp salt .
  • 2-3 large bananas, mashed .
  • 2 tsps baking powder .
  • 2 tsps baking soda .
  • 1 tsp vanilla .
  • 2 tsps cinnamon .
  • 3/4 c Splenda brown sugar mix .
  • 3 eggs (I use large eggs, may need 4 eggs if you have small size) .
  • 1 c oil .
  • 1/2 c sour cream

Directions
  • Step #1 Beat sugar & oil.
  • Step #2 Add eggs & sour cream, mix until creamy.
  • Step #3 Add bananas & zucchini, salt, cinnamon, vanilla, baking powder & baking soda.
  • Step #4 Slowly add flour, oats & nuts (if using).
  • Step #5 Put into a well greased & floured loaf pan.
  • Step #6 Bake at 350 degrees for about 35 - 45 mins.
  • Step #7 Will make 3 or 4 pans depending on size.
  • Step #8 I have made this using mini loaf pans & shortened the baking time to 25 - 30 min Check for doneness after 25 min.
