Chocolate Tofu Pudding Recipe

Ingredients
  • 2/3 c Splenda sugar substitute .
  • 1 tsp vanilla extract .
  • 3 oz bittersweet chocolate, finely sliced (not unsweetened) .
  • 1 (12 1/3 oz) package lowfat silken tofu .
  • 1/2 tsp orange zest, freshly grated .
  • 1/3 c unsweetened cocoa powder .
  • 1/4 c boiling water

Directions
  • Step #1 Puree tofu in a food processor/blender, scraping down the sides as needed, until completely smooth.
  • Step #2 Combine chocolate & cocoa in a medium bowl.
  • Step #3 Add boiling water & stir with a wooden spoon until the chocolate has melted & the mixture is smooth.
  • Step #4 Stir in vanilla & orange zest.
  • Step #5 Mix in splenda, a little at a time, until smooth.
  • Step #6 Add the chocolate mixture to the processor; puree until smooth & well mixed, scraping down the sides as needed.
  • Step #7 pour this into six pudding or custard c.
  • Step #8 Cover up & put in the fridge for at least 1 hr.
