Chocolate Dipped Hazelnut Shortbread Recipe Recipe

Ingredients
  • 1 c hazelnuts .
  • 1 c all-purpose flour .
  • 4 oz semisweet chocolate .
  • 1/2 tsp salt .
  • 8 tbsps butter .
  • 1/2 tsp baking powder .
  • 1 egg .
  • 1/3 c sugar .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Place hazelnuts on baking sheet.
  • Step #3 Bake until they're a shade darker & fragrant, about 10 to 15 mins.
  • Step #4 Remove from oven & set aside to cool.
  • Step #5 Lower oven to 325F degrees F.
  • Step #6 Place hazelnuts in mixer or food processor/blender & pulse to coarse bits; set aside.
  • Step #7 Whisk together flour, baking powder, & salt to mix; set aside.
  • Step #8 Beat butter & sugar together with a wooden spoon until smooth.
  • Step #9 Beat in egg.
  • Step #10 Gradually beat the flour mixture into the butter mixture.
  • Step #11 Add the sliced hazelnuts & mix until distributed evenly throughout.
  • Step #12 Form into finger sized logs, about 1 1/2 to 2 tbsps dough each, & place on greased cookie sheets.
  • Step #13 Bake until firm, about 15 mins.
  • Step #14 Remove from oven & cool on racks.
  • Step #15 In a saucepan over lowest heat or in a double boiler, melt chocolate.
  • Step #16 Dip 1 end of cooled cookies into melted chocolate.
  • Step #17 Place back on cookie sheet to harden.
