Ingredients
6 oz semi-sweet chocolate chips .
1/4 c canola oil .
1 (20 oz) package Pillsbury Fudge Brownie Mix, 9x13 size .
1/4 c applesauce .
2 eggs .
3 tbsps butter .
4 tbsps butter, softened .
BROWNIE LAYER .
1/4 c water .
2 tbsps green creme de menthe (or add mint extract & green food coloring) .
CHOCOLATE GLAZE .
MINT FROSTING .
1 (3 oz) package cream cheese, softened .
3 c confectioners' sugar
Directions
Step #1 Heat oven to 350°F.
Step #2 Brownies: Grease bottom only of 13x9-inch pan.
Step #3 In large bowl, mix all brownie ingredients; beat 50 strokes by hand.
Step #4 Spread in greased pan.
Step #5 Bake at 350°F.
Step #6 (or 325F if using glass) for the amount of time directed on the package (mine needed 29 mins).
Step #7 DO NOT OVERBAKE.
Step #8 Cool completely (it cannot be frosted until there is no warmth on the bottom of the pan or the frosting will slide around.
Step #9 Mint Frosting: In medium bowl, beat butter & cream cheese until light & fluffy.
Step #10 Add remaining filling ingredients; beat until smooth.
Step #11 Spread evenly over cooled brownies.
Step #12 Refrigerate until hard (approximately 30 mins).
Step #13 Glaze: In small saucepan, melt butter.
Step #14 Then turn off heat & stir in the chips, stirring until completely smooth.
Step #15 Pour frosting evenly over filling; spread carefully to cover.
Step #16 I like to run a serrated knife across the top to give it a pattern.
Step #17 Refrigerate 1 hr before cutting into bars but don't let the chocolate topping harden too much or it will crack when you cut it.
Step #18 Store in refrigerator (they also freeze beautifully).
