Old Fashioned Rhubarb Pudding Cake Recipe

Ingredients
  • 1 1/2 c sugar, divided .
  • 2 tsps baking powder .
  • 1 egg .
  • 4 c sliced fresh rhubarb or frozen rhubarb .
  • 1/2 tsp vanilla extract .
  • 1/2 c milk .
  • 1/4 c shortening .
  • 1/4 tsp salt .
  • 1 c flour

Directions
  • Step #1 In a large saucepan, mix rhubarb & 1 c of sugar.
  • Step #2 Cook over med-heat/flame for 12-15 mins or until rhubarb is tender.
  • Step #3 Meanwhile, in a small mixing bowl, cream shortening & remaining sugar; beat in egg & vanilla.
  • Step #4 Combine the flour, baking powder & salt; add to creamed mixture alternately with milk.
  • Step #5 Beat just until mixd.
  • Step #6 Pour into a greased 9 inch square baking dish.
  • Step #7 Pour the rhubarb mixture over the batter.
  • Step #8 Bake at 350° for 30-35 mins or until a toothpick inserted near the center comes out clean.
  • Step #9 Cool on a wire rack.
