Pork & Fruit Pasta Recipe

Ingredients
  • 1 c fat-free low-sodium chicken broth .
  • 1/2 c dried pitted prunes, halved .
  • 2 onions, small, quartered .
  • 1 large golden delicious apples, cut into 1-inch chunks .
  • 1/4 tsp ground ginger .
  • 1 (1 lb) box rotini pasta .
  • 1/4 tsp ground pepper .
  • 1/4 c dried apricots, halved .
  • 1 lb boneless pork, cut into 1-inch chunks .
  • 1 tsp salt

Directions
  • Step #1 Carefully saute pork & onions in the oil until browned.
  • Step #2 Add the broth, pepper & ginger, salt, & stir this to mix.
  • Step #3 Bring to a boil, then reduce heat, cover & simmer for 30 mins.
  • Step #4 Add fruits & simmer, covered 20 mins longer, or until pork is fork-tender.
  • Step #5 Meanwhile, cook the rotini according to the directions on the box.
  • Step #6 Serve the pork & fruit over hot pasta.
