Salsa De Serrano Rojo (red Serrano Sauce) Recipe

Ingredients
  • 4 tbsps white sugar .
  • 4 lbs red serrano peppers .
  • 1 tbsp salt .
  • 1/4 c fresh lime juice .
  • 3/4 c water .
  • 1 c white balsamic vinegar .
  • 1 c cider vinegar .
  • 6 large garlic cloves .
  • 2 tbsps ground cumin

Directions
  • Step #1 Stem serranos, & puree along with garlic in mixer until smooth adding water if necessary to maintain puree.
  • Step #2 Press puree through a sieve to remove seed particles.
  • Step #3 Combine 40 oz.
  • Step #4 serrano puree with all other ingredients in bowl.
  • Step #5 Work in batches back through mixer, & strain again.
  • Step #6 Bottle in sprinkle top bottles & put in the fridge.
