Chocolate Mint Dessert Recipe

Ingredients
  • 4 (1 oz) squares unsweetened chocolate
  • 1 tsp vanilla extract
  • 1/4 c sliced pecans
  • 1 1/2 c sugar
  • 1 (12 oz) can evaporated milk
  • 1 (10 oz) package shredded coconut
  • 1 c butter or margarine, divided
  • 2 quarts mint chocolate chip ice cream, softened
  • 1/4 c packed brown sugar

Directions
  • Step #1 In a skillet, melt 1/2 c butter.
  • Step #2 Add coconut; cook & stir until golden brown.
  • Step #3 Remove from the heat.
  • Step #4 Stir in brown sugar & pecans; mix well.
  • Step #5 Set aside 1 c.
  • Step #6 Press remaining coconut mixture onto the bottom & up the sides of a greased 13-in.
  • Step #7 x 9-in.
  • Step #8 x 2-in.
  • Step #9 dish.
  • Step #10 In a saucepan over med-heat/flame, melt the chocolate & remaining butter.
  • Step #11 Add sugar & milk.
  • Step #12 Bring to a slow boil; cook for 5 mins.
  • Step #13 Remove from the heat; stir in the vanilla.
  • Step #14 Cool; pour over coconut mixture.
  • Step #15 Spread ice cream over top.
  • Step #16 Sprinkle top with the reserved coconut mixture.
  • Step #17 Freeze for 6-8 hrs or overnight.
  • Step #18 Remove from the freezer 15 mins before serving.
  • Step #19 The dessert may be frozen for up to 2 months.
