Chocolate Chip Bread Pudding With Cinnamon-raisin Sauce Recipe

Ingredients
  • Cinnamon Rum Sauce .
  • 6 large eggs .
  • 1 tsp ground cinnamon .
  • 1 c unsalted butter .
  • 1/4 c dark rum .
  • 1 tbsp vanilla extract .
  • 2 tbsps vanilla extract .
  • 2 1/2 c half-and-half .
  • 4 large egg yolks .
  • 1 c semi-sweet chocolate chips .
  • 1/4 tsp salt .
  • 2 tbsps packed dark brown sugar .
  • 1 c packed dark brown sugar .
  • 1/8 tsp salt .
  • 1 c sugar .
  • 10 tbsps unsalted butter, melted .
  • 1 lb loaf brioche bread or egg bread (* with crust, cut into 1-inch cubes)

Directions
  • Step #1 Preheat oven to 350°F Butter 13x9x2-inch glass baking dish.
  • Step #2 Place bread in large bowl; pour 8 tbsps melted butter over bread & toss to coat.
  • Step #3 Add chocolate chips & toss to mix.
  • Step #4 Transfer mixture to prepared dish.
  • Step #5 Whisk half & half, 1 c sugar, egg yolks, eggs, vanilla extract, & salt in large bowl to mix.
  • Step #6 Pour over bread cubes in dish.
  • Step #7 Let stand 30 mins, every once in awhile pressing bread cubes into custard.
  • Step #8 (Can be prepared 1 day ahead.
  • Step #9 Cover up & put in the fridge.
  • Step #10 ) Drizzle remaining 2 tbsps melted butter over pudding; sprinkle with brown sugar.
  • Step #11 Bake bread pudding until puffed, brown, & set in center, about 1 hr.
  • Step #12 Serve warm with Cinnamon-Rum Sauce.
  • Step #13 To make the sauce:.
  • Step #14 Melt unsalted butter in heavy medium saucepan over medium-low heat.
  • Step #15 Add dark brown sugar, & salt & whisk until sugar is dissolved & mixture is bubbling & smooth, ground cinnamon, about 6 mins.
  • Step #16 Remove from heat.
  • Step #17 Whisk in dark rum & vanilla extract.
  • Step #18 Serve warm over the baked bread pudding.
  • Step #19 (Cinnamon-Rum Sauce can be prepared 2 days ahead.
  • Step #20 Cover up & put in the fridge.
  • Step #21 Rewarm over low heat/flame, whisking every once in awhile, before serving.
  • Step #22 ) *Brioche is a golden, light bread made from egg- & butter-enriched yeast dough.
  • Step #23 It is available at French bakeries & some large supermarkets.
  • Step #24 **Cook time does not include letting bread stand 30 mins before baking.
