Grilled Balsamic And Grapefruit Glazed Salmon Recipe

Ingredients
  • 1/2 tsp pepper .
  • 1 c freshly squeezed grapefruit juice .
  • 2 grapefruits, sliced 1/2 " thick (8 slices needed) .
  • 1/2 tsp salt .
  • 2 tbsps balsamic vinegar .
  • 2 tbsps brown sugar .
  • 4 (6 oz) salmon fillets

Directions
  • Step #1 Combine grapefruit juice, balsamic vinegar & brown sugar in medium saucepan.
  • Step #2 Boil until reduced by half, approximately 15 mins.
  • Step #3 Hold warm.
  • Step #4 To Make One Portion:.
  • Step #5 Spice up each side of salmon fillet with 1/16 tsp salt & 1/16 tsp pepper.
  • Step #6 Grill salmon, about 5 mins per side, presentation side down, until just done in center, depending on thickness of fillet.
  • Step #7 Brush salmon with 1 tbsp grapefruit glaze during grilling & just before removing from grill.
  • Step #8 Place 2 grapefruit slices on serving plate & top this with cooked salmon fillet.
  • Step #9 Drizzle 1 tbsp glaze on top of salmon.
  • Step #10 Serve with a potatoe & vegetables.
  • Step #11 Serve as soon as possible.
