Step #1 Cut pork into cubes, separating lean meat & fat.
Step #2 Measure or weigh; you should have equal parts, or 2 lbs each, fat & lean meat.
Step #3 Grind coarsely.
Step #4 Combine ground meat in large bowl with remaining ingredients, & mix well with your hands or a heavy spoon.
Step #5 Cover up & chill at least 2 hrs or overnight.
Step #6 Shape into patties or links.
Step #7 Cook as you would any sausage.
