Linguica Sausage ( Portuguese ) Recipe

Ingredients
  • 1/2 tsp ground cloves .
  • 1 tbsp coriander .
  • 4-7 garlic cloves, minced or garlic cloves, pressed .
  • 1/2 tsp cinnamon .
  • 1/4 c cider vinegar .
  • 1/2 c cold water .
  • 1 tbsp paprika .
  • 4-6 small dried hot chili peppers, crushed .
  • 1/2 tsp allspice .
  • 2 1/2-3 1/2 tsps salt .
  • 4 lbs boneless pork butt

Directions
  • Step #1 Cut pork into cubes, separating lean meat & fat.
  • Step #2 Measure or weigh; you should have equal parts, or 2 lbs each, fat & lean meat.
  • Step #3 Grind coarsely.
  • Step #4 Combine ground meat in large bowl with remaining ingredients, & mix well with your hands or a heavy spoon.
  • Step #5 Cover up & chill at least 2 hrs or overnight.
  • Step #6 Shape into patties or links.
  • Step #7 Cook as you would any sausage.
