Ingredients
3 c water .
2 tbsps olive oil .
1/2 c sliced fresh parsley .
1 c water .
3 dill pickles, sliced .
3 large garlic cloves .
3/4 lb mozzarella cheese, cut into 1/2-inch cubes .
3/4 tsp salt .
1 1/4 tsps salt .
1/2 tsp fenugreek seeds .
2 1/2 lbs trimmed pork shoulder, cut into 3/4-inch pieces .
3/4 tsp coriander seeds .
1 large red onion, finely sliced .
4 jalapeno peppers, finely sliced .
1 tsp dried summer savory .
3/4 lb old fashioned grits .
1 bell pepper, sliced
Directions
Step #1 Place pork in 4 qusrt pot & salt & pepper to taste.
Step #2 Cover up pot & let meat steam over high heat, stirring every once in awhile, 10 mins.
Step #3 Stir in 1 tbsp olive oil & brown meat, stirring every once in awhile, 6-8 mins.
Step #4 Mash garlic cloves, summer savory, & 3/4 tsp salt in mortar & pestle.
Step #5 Put garlic paste into & small bowl & grind the coriander & fenugreek seeds in the mortar & pestle.
Step #6 Add garlic paste & 1 tsp olive oil to pork & stir over med-heat/flame 1 min.
Step #7 Add onion, bell & jalapeno peppers & coriander/fenugreek & cook this until onion is softened, about 5 mins.
Step #8 Add 1 c water & bring to bowl.
Step #9 Reduce heat & let simmer 1 hr.
Step #10 Add parsley & pickles & serve over grits.
Step #11 For the grits:.
Step #12 Bring 3 c water & 3/4 tsp salt to a boil.
Step #13 Stir in grits, stirring, return to boil, then simmer, until thickended, about 18 mins.
Step #14 Increase heat to medium-low & add cheese a few cubes at a time while stirring until it is all melted inches.
