Apricot Almond Orange Tart With White Chocolate Cream Recipe

Ingredients
  • 1 egg yolk (white reserved) .
  • 3 tbsps brown sugar .
  • 3/4 c butter .
  • White Chocolate Cream .
  • 1/4 c white sugar .
  • 1/2 tsp salt .
  • 1/2 c butter .
  • 2 tsps ground cinnamon .
  • 1 c ground almonds .
  • 3 tbsps lemon juice .
  • 1 c whipping cream .
  • 1 1/2 c all-purpose flour .
  • 1/4 c brown sugar .
  • 1/2 c peach jam or apricot jam .
  • 1/8 tsp salt .
  • 2 eggs, beaten with reserved egg white .
  • Pastry .
  • 20 whole dried apricots or 1 c sliced dried apricots .
  • 4 oz white chocolate, sliced finely .
  • 1 navel orange, very thinly sliced, peel cut off .
  • Filling .
  • 1 tsp cinnamon .
  • Topping

Directions
  • Step #1 Place apricots in a shallow dish & cover (just) with boiling water.
  • Step #2 Allow to sit & soften, they will become raisin-like.
  • Step #3 Meanwhile, brown sugar, cinnamon, mix flour, & salt in a bowl.
  • Step #4 Add butter in small pieces & mix until mixture looks like coarse sand.
  • Step #5 Beat together egg yolk & lemon juice & pour this into flour mixture while mixer is running.
  • Step #6 Mix well, & if dough seems a little dry, add a little extra lemon juice.
  • Step #7 Now knead mixture carefully by hand & form into a ball.
  • Step #8 Flatten into a disc shape & chill for 10 mins before using.
  • Step #9 Preheat oven to 425F degrees.
  • Step #10 Roll out pastry on a floured surface & place this in a 9 inch tart or pie pan, forming it up the sides.
  • Step #11 Prick pastry with a fork, line with tinfoil wrap & place a pie weight on top.
  • Step #12 If you don't have a pie weight, simply line with foil wrap, & place a heavy baking dish right on top of the foil wrap.
  • Step #13 This will prevent the pastry from puffing up while baking, & keep it tart-like.
  • Step #14 Bake 15 mins, remove foil wrap & weight & bake for 5 mins longer.
  • Step #15 Reduce oven temp to 375 degrees.
  • Step #16 Place ground almonds on a cookie sheet & bake for 3 mins, cool.
  • Step #17 Drain water off apricots.
  • Step #18 If using whole apricots, cut each apricot into 6-8 small pieces.
  • Step #19 Combine almonds, butter, sugar & sliced apricots in a bowl.
  • Step #20 Add salt, eggs & reserved egg white & mix well.
  • Step #21 Pour onto cooled baked tart shell & bake 25 mins or until set.
  • Step #22 Place orange slices on top.
  • Step #23 Melt jam on stove & brush top of tart with glaze.
  • Step #24 Bring whipping cream to a slow boil in a pan, stirring often.
  • Step #25 Pour over sliced white chocolate & stir until chocolate is smooth & melted.
  • Step #26 Cool completely in refrigerator to let mixture become thicker.
  • Step #27 Cut & serve tart, stir cold chocolate cream mixture again & drizzle over tart portions on plate.
