Raspberry Plum Crumble Recipe

Ingredients
  • 8 tbsps unsalted butter, cold & sliced .
  • 3 tbsps sliced almonds, for sprinkling .
  • 1/2 pint fresh raspberries .
  • 2 tbsps orange juice .
  • 1 1/4 c all-purpose flour, divided .
  • 1/4 tsp kosher salt .
  • 1/3 c light brown sugar, packed .
  • 1/2 c quick-cooking oats .
  • 2/3 c granulated sugar, divided .
  • 2 lbs red plums .
  • 1/2 c sliced almonds, plus

Directions
  • Step #1 Preheat the oven to 350°F.
  • Step #2 Cut in the Plums in half & pit them.
  • Step #3 Now cut them into 1-inch wedges.
  • Step #4 In a large bowl, mix the sliced plums, 1/4 c of the flour, 1/3 c of the granulated sugar, & the orange juice & toss well.
  • Step #5 Add the raspberries & toss lightly.
  • Step #6 Pour into a 9 by 12 by 2-inch baking dish.
  • Step #7 For the topping, the brown sugar, the remaining 1/3 c of granulated sugar, place the remaining 1 c of flour, & the salt in the bowl of a food processor/blender fitted with a steel blade & pulse a few times to mix.
  • Step #8 Add the butter & pulse until the butter is the size of peas.
  • Step #9 Pour the mixture into a bowl, add the oats, & work it with your hands until it's in large crumbles.
  • Step #10 Add 1/2 c of the almonds & mix well.
  • Step #11 Spread the topping evenly over the plums, making sure the fruit is covered.
  • Step #12 Sprinkle top with some extra almonds.
  • Step #13 Bake for 40 mins, or until the fruit is tender & bubbly & the topping is golden brown.
  • Step #14 Serve warm or at about room temp.
