Arugula-chive Salmon Wraps Recipe

Ingredients
  • 1/4 c low-fat mayonnaise .
  • 1/2 tsp salt .
  • 4 whole wheat tortillas .
  • 1/4 tsp fresh ground pepper .
  • 2 tsps olive oil .
  • 2 tbsps sliced chives .
  • 2 tbsps orange juice .
  • 2 c baby arugula .
  • 2 salmon fillets .
  • 12 cherry tomatoes, halved halved or grape tomatoes, halved

Directions
  • Step #1 Heat broiler.
  • Step #2 Brush salmon with oil; season this with salt & pepper to taste.
  • Step #3 Broil, skin-side down, until flaky, about 6 mins.
  • Step #4 Set aside & keep warm.
  • Step #5 Meanwhile, make the dressing.
  • Step #6 Combine 1 1/2 c of the arugula, chives, mayonnaise, orange juice & pepper to taste in a food processor/blender or mixer; pulse until mixd to desired texture.
  • Step #7 Chop the salmon into bite-sized pieces.
  • Step #8 Divide dressing among wraps.
  • Step #9 Distribute tomatoes & remaining arugula among wraps.
  • Step #10 Place salmon on top; roll tightly.
