Linda's Salmon Chowder Recipe

Ingredients
  • 1/2 c margarine .
  • 8 large potatoes, peeled & cubed into 1-inch squares .
  • 2 quarts whole milk, is best .
  • 2 lbs fresh skinless salmon fillets, skin removed & cut into 1-inch cubes or 2 (15 oz) cans salmon, flaked & skin & bones removed, reserving any juice from canned salmon .
  • 1 (14 3/4 oz) can corn, including juice .
  • 1 (12 oz) can evaporated milk .
  • salt & pepper, to taste .
  • 2 large onions, cut in half, then thinly sliced

Directions
  • Step #1 In a lg.
  • Step #2 pot, put in potatoes, onions, & salmon.
  • Step #3 Add enough water to cover all.
  • Step #4 Add salt & pepper, & let come to a boil.
  • Step #5 Boil about 15 mins Drain out water, until liquid is just covering potatoes.
  • Step #6 Add corn, evaporated milk, & juice of corn, milk, & reserved juice from canned salmon.
  • Step #7 Stir.
  • Step #8 Add a stick of margarine, & stir as it melts, to mix inches Heat for 20 mins on med.
  • Step #9 heat.
  • Step #10 Add salt & pepper, to taste.
  • Step #11 Makes a big pot.
