Chick Pea And Mint Rice Recipe

Ingredients
  • 1/4 c mint, sliced .
  • 1 bay leaf (tejpatta) .
  • 1/2 tsp garlic, sliced .
  • 1 c rice, washed & soaked .
  • 1/2 tsp lemon juice .
  • 1/2 c onions, sliced .
  • 1/2 c mixed vegetables, sliced (French beans, carrots, peas) .
  • salt .
  • 1/2 c boiled chickpeas (kabuli chana) .
  • 1 tsp oil

Directions
  • Step #1 1.
  • Step #2 Heat the oil in a non-stick pan, add the onions, garlic & bay leaf & cook till the onions are soft.
  • Step #3 2.
  • Step #4 Add the vegetables, rice, 2 c water & salt & cook over medium flame till the rice is partially cooked.
  • Step #5 3.
  • Step #6 Add the chick peas, mint & lemon juice, mix well & cook covered over low flame till the rice is cooked.
  • Step #7 4.
  • Step #8 Serve hot.
