Ingredients
pecorino romano cheese, for serving .
all-purpose flour, for coating .
1/2 tsp salt .
1/3 c finely grated pecorino romano cheese, plus extra .
1 large egg .
1 lb fresh ricotta cheese .
1 pinch white pepper .
3/4 c all-purpose flour, plus extra
Directions
Step #1 Line medium bowl with several layers of paper towels.
Step #2 Spoon ricotta cheese into bowl.
Step #3 Let drain at least 30 mins & up to 1 hr.
Step #4 Beat egg, 1/3 c Pecarino Romano cheese, salt, & white pepper in large bowl to mix.
Step #5 Mix in ricotta.
Step #6 Sprinkle top 3/4 c flour over & stir carefully to mix.
Step #7 Cover up & chill dough 1 hr.
Step #8 Line rimmed baking sheet with plastic wrap.
Step #9 Place some flour in bowl.
Step #10 For each gnudi carefully roll 1 heaping tspful of dough into ball.
Step #11 Add to flour; toss to coat lightly, shaping into short log.
Step #12 Place on baking sheet.
Step #13 Cook gnudi in large pot of boiling, salted water until very tender, about 8 mins.
