Ricotta Gnudi Recipe

Ingredients
  • pecorino romano cheese, for serving .
  • all-purpose flour, for coating .
  • 1/2 tsp salt .
  • 1/3 c finely grated pecorino romano cheese, plus extra .
  • 1 large egg .
  • 1 lb fresh ricotta cheese .
  • 1 pinch white pepper .
  • 3/4 c all-purpose flour, plus extra

Directions
  • Step #1 Line medium bowl with several layers of paper towels.
  • Step #2 Spoon ricotta cheese into bowl.
  • Step #3 Let drain at least 30 mins & up to 1 hr.
  • Step #4 Beat egg, 1/3 c Pecarino Romano cheese, salt, & white pepper in large bowl to mix.
  • Step #5 Mix in ricotta.
  • Step #6 Sprinkle top 3/4 c flour over & stir carefully to mix.
  • Step #7 Cover up & chill dough 1 hr.
  • Step #8 Line rimmed baking sheet with plastic wrap.
  • Step #9 Place some flour in bowl.
  • Step #10 For each gnudi carefully roll 1 heaping tspful of dough into ball.
  • Step #11 Add to flour; toss to coat lightly, shaping into short log.
  • Step #12 Place on baking sheet.
  • Step #13 Cook gnudi in large pot of boiling, salted water until very tender, about 8 mins.
