Creme Fraiche Chicken Recipe

Ingredients
  • salt & pepper to taste
  • 1 tbsp sliced garlic
  • 1 large white onion, sliced
  • 1/4 c white wine
  • 6 skinless, boneless chicken breast halves
  • 2 c creme fraiche
  • 2 (8 oz) packages sliced fresh mushrooms
  • 1 (8 oz) package pasta, your choice of shape
  • 1/2 c grated Parmesan cheese for topping
  • 3 tbsps sour cream

Directions
  • Step #1 In a large skillet, saute chicken breasts in oil over medium high heat.
  • Step #2 Once breasts are browned, add white wine & salt & pepper to taste.
  • Step #3 Let simmer for 15 to 20 mins, or until chicken is cooked through & juices run clear.
  • Step #4 Meanwhile, To Cook Pasta: Bring a large pot of salted water to a boil.
  • Step #5 Add pasta to boiling water, cook for 8 to 10 mins or until al dente.
  • Step #6 Drain.
  • Step #7 When chicken is cooked, remove this from skillet & cube.
  • Step #8 Set aside.
  • Step #9 Saute onion & garlic in remaining juices.
  • Step #10 Once onions are translucent, add mushrooms & saute until soft.
  • Step #11 Add cubed chicken, creme fraiche & sour cream (to desired thickness).
  • Step #12 Stir all together & heat through.
  • Step #13 Put hot cooked pasta on plate, top this with chicken & sauce & sprinkle with grated Parmesan cheese.
