California Pink Shrimp Stir Fry With Peppers And Mango Recipe

Ingredients
  • 1 tsp butter .
  • 1 c green sweet peppers .
  • 1 lb cooked shrimp .
  • 1 c yellow peppers .
  • 3 jalapeno chiles .
  • 1/3 c mango juice .
  • 1 c red peppers .
  • 2 limes, juice of .
  • 1 c yellow onions .
  • 1 c mangoes, slices .
  • fresh ground black pepper .
  • 1 tsp olive oil

Directions
  • Step #1 Remove seeds & stem from sweet peppers & cut into thin strips.
  • Step #2 (Strips may be left long or cut in 1 inch pieces.
  • Step #3 ) Peel onion & cut into thin strips about one inch long.
  • Step #4 Carefully remove seeds & stems from the jalapeno peppers & mince flesh.
  • Step #5 Heat butter & olive oil together In a large-ish non-stick skillet.
  • Step #6 Saute onion & sweet peppers on medium heat until tender but still crisp, about 4-5 mins.
  • Step #7 Continue cooking & add mango slices, mango juice, California Pink Shrimp, lime juice & chilies.
  • Step #8 Toss carefully until shrimp & mango slices are heated.
  • Step #9 Serve with cooked couscous or rice.
