Step #9 Cook over moderately low heat, stirring, for 1 min.
Step #10 Add the whiskey & carefully ignite it with a long match.
Step #11 When the flames die down, add the cream, mushrooms & any juices from the scallops.
Step #12 Simmer the sauce until slightly reduced.
Step #13 Add the scallops to the sauce, season this with salt & pepper & serve.
