Scallops With Mushrooms And Whiskey Sauce Recipe

Ingredients
  • 1/3 c whiskey .
  • 1 1/2 lbs bay scallops .
  • 1/4 c heavy cream .
  • 1 tbsp fresh lemon juice .
  • 4 scallions, thinly sliced crosswise .
  • fresh ground black pepper .
  • 1 lb mushrooms, quartered .
  • salt .
  • 2 1/2 tbsps unsalted butter

Directions
  • Step #1 Toss the mushrooms with the lemon juice.
  • Step #2 In a skillet, melt 1 tbsps of the butter & add the mushrooms; season this with salt & pepper & cook over moderately high heat until they start to brown, about 2 mins.
  • Step #3 Reduce heat to moderate & cook this until the mushrooms are deeply browned, about 6 mins & then transfer to a large plate.
  • Step #4 Add 1 tbsps of the butter the skillet & melt over high heat.
  • Step #5 Add the scallops to the pan in an even layer & season this with salt & pepper.
  • Step #6 Cook the scallops undisturbed until they start to brown & some juices are exuded, about 2 mins.
  • Step #7 Stir briefly, then transfer the scallops & any accumulated juices to a bowl.
  • Step #8 Add remaining 1/2 tbsps of the butter & the scallions to the skillet.
  • Step #9 Cook over moderately low heat, stirring, for 1 min.
  • Step #10 Add the whiskey & carefully ignite it with a long match.
  • Step #11 When the flames die down, add the cream, mushrooms & any juices from the scallops.
  • Step #12 Simmer the sauce until slightly reduced.
  • Step #13 Add the scallops to the sauce, season this with salt & pepper & serve.
