Swiss Fondue Recipe

Ingredients
  • 1-2 tsp lemon juice .
  • 4 oz Appenzeller cheese, grated .
  • salt, to taste .
  • 3 tbsps kirsch .
  • nutmeg, to taste .
  • French bread or Italian bread or pumpernickel bread or rye bread (3 different kinds of unsliced crusty bread) .
  • 2 c dry white wine .
  • 3 tbsps flour .
  • 1 garlic clove, halved .
  • 1 lb emmenthaler cheese, grated .
  • pepper, to taste

Directions
  • Step #1 Cut the bread into 1-inch cubes, trying to leave a little crust on each cube.
  • Step #2 Set aside until ready to serve.
  • Step #3 Combine the grated cheeses & flour; toss to thoroughly coat the cheese.
  • Step #4 Rub the inside of the fondue pot with the cut side of the garlic clove.
  • Step #5 Add the wine & bring to a simmer.
  • Step #6 Stir in the lemon juice.
  • Step #7 Add the cheese, stirring constantly, a handful at a time, making sure to completely melt the cheese after each addition.
  • Step #8 When the cheese is completely melted stir in the the Kirsch.
  • Step #9 Add salt, freshly gound black pepper, & nutmeg.
  • Step #10 Serve as soon as possible.
