Weight Watcher's 2 Pts Slow Cooker Beef Chili Recipe

Ingredients
  • 1/4 c canned sliced chilies, seeded & finely sliced or 1 fresh jalapeno pepper, seeded & finely sliced .
  • black pepper .
  • 2 tsps cumin .
  • 1 (28 oz) can crushed tomatoes .
  • 1 tbsp minced fresh garlic .
  • 1 sweet onion, sliced .
  • 2 tbsps chili powder .
  • 1 large red bell pepper, seeded & sliced .
  • 1 large green bell pepper, seeded & sliced .
  • 2 tbsps tomato paste .
  • 1 (15 oz) can red kidney beans (rinsed & drained) .
  • 1 lb extra lean ground beef or ground turkey

Directions
  • Step #1 Cook the ground beef & garlic in a nonstick skillet breaking apart the meat with a spoon until well browned; drain off any fat very well, then return to skillet.
  • Step #2 Add in the bell peppers; cook this until softened (about 5 mins).
  • Step #3 Add in the chili powder & cumin & stir this to coat.
  • Step #4 In the slow cooker (aka crockpot), mix together tomatoes, chilies & tomato paste, sweet onion, beans, then stir in the the beef mixture.
  • Step #5 Cover up & cook on HIGH until flavors are mixed (about 4-5 hrs).
  • Step #6 Spice up with black pepper.
