Cream Cheese Pumpkin Muffins Recipe

Ingredients
  • 1 (8 oz) package cream cheese, softened
  • 1/2 tsp salt
  • 24 pecan halves
  • 1/2 c canola oil
  • 1 tbsp sugar
  • 1 c canned pumpkin
  • 1 tsp baking soda
  • 1 egg
  • 2 1/4 c all-purpose flour
  • 3 tsps pumpkin pie spice
  • MUFFIN:
  • 2 eggs, lightly beaten
  • 2 c sugar

Directions
  • Step #1 For the filling, beat the cream cheese, in a small mixing bowl, egg & sugar until smooth; set aside.
  • Step #2 In a large bowl, pumpkin pie spice, mix the flour, baking soda & salt.
  • Step #3 Beat the eggs, sugar, pumpkin & oil; stir in theto dry ingredients just until moistened.
  • Step #4 Divide half of the batter among 24 greased or paper-lined muffin c.
  • Step #5 Drop filling by tspfuls over batter.
  • Step #6 Top with remaining batter.
  • Step #7 Place a pecan on each muffin if desired.
  • Step #8 Bake at 350 degrees F for 20-22 mins or until a toothpick comes out clean.
  • Step #9 Cool for 5 mins before removing from pans to wire racks.
