Cucumber Soup Recipe

Ingredients
  • 1/2 c minced fresh parsley
  • 2 medium tomatoes, sliced
  • TOPPINGS:
  • 3/4 c sliced almonds, toasted
  • 3 c sour cream
  • 3 c chicken broth
  • 3 medium cucumbers
  • 1/2 c sliced green onions
  • 3 tbsps cider vinegar
  • 1 clove garlic, minced
  • 2 tsps salt

Directions
  • Step #1 Peel cucumbers; halve lengthwise & remove seeds.
  • Step #2 Cut into chunks.
  • Step #3 In a mixer, cover & puree cucumbers & broth in small batches.
  • Step #4 Transfer to a large bowl; stir in the the sour cream, vinegar, salt if desired & garlic until well mixed.
  • Step #5 Cover & put in the fridge for at least 4 hrs.
  • Step #6 Stir before serving.
  • Step #7 Garnish with tomatoes, almonds, onions & parsley.
