Layered Shrimp, Corn And Pea Salad Recipe

Ingredients
  • 1 lb peeled cooked shrimp .
  • 1 tbsp balsamic vinegar .
  • 1 red bell pepper, seeded & sliced .
  • 1/4 tsp pepper .
  • 1/2 c sliced fresh cilantro or fresh basil or fresh parsley .
  • 1 1/2 lbs tomatoes (any kind, halve cherry or grape tomatoes, bigger ones can be cut in bite-size pieces) .
  • 1/4 c olive oil .
  • 6 c salad greens .
  • 2 c frozen peas, thawed .
  • 1 tbsp fresh lemon juice .
  • 1 avocado, peeled & cut into small chunks .
  • 3/4 tsp salt .
  • 2 c frozen corn kernels, thawed

Directions
  • Step #1 Whisk oil, juice, vinegar, salt & pepper In a large-ish bowl.
  • Step #2 Add tomatoes & avocado; toss carefully.
  • Step #3 Let stand 20 mins to develop flavors.
  • Step #4 Mix corn, peas & bell pepper in a 4 quart serving bowl; spread evenly across the bottom of the bowl.
  • Step #5 Top corn layer with 1/2 of the greens, the shrimp, then the remaining greens.
  • Step #6 Spread tomato mixture over top & sprinkle with cilantro.
  • Step #7 When serving spoon directly down to hit all of the layers (you can also just mix it all together, too).
