Cranberry Cheesecake Recipe

Ingredients
  • 1/3 c water
  • 1 c sugar
  • 5 eggs
  • FILLING:
  • 1 tbsp lemon juice
  • 1 tsp lemon juice
  • 2/3 c sugar
  •

  • 2 c graham cracker or shortbread cookie crumbs
  • 1/3 c butter or margarine, melted
  • CRANBERRY TOPPING:
  • 4 (8 oz) packages cream cheese, softened
  • 2 c fresh cranberries

Directions
  • Step #1 Combine crumbs & butter; press into the bottom of a 9-in.
  • Step #2 springform pan.
  • Step #3 Bake at 300F degrees F for 5-8 mins.
  • Step #4 Cool.
  • Step #5 Meanwhile, for topping, mix water & sugar in a saucepan.
  • Step #6 Bring to a boil over med-heat/flame; boil 1 min.
  • Step #7 Stir in berries; cover & reduce heat.
  • Step #8 Cook until most berries have popped, about 3 mins.
  • Step #9 Add lemon juice.
  • Step #10 Press mixture through a sieve or food mill; set aside.
  • Step #11 For filling, beat cream cheese in a large mixing bowl until light.
  • Step #12 Gradually beat in sugar.
  • Step #13 Add eggs, one at a time, beating well after each.
  • Step #14 Add lemon juice.
  • Step #15 Pour into crust; spoon 4 tbsps topping on filling & "marble" with a knife or spatula.
  • Step #16 Bake at 350 degrees F for 45 mins.
  • Step #17 Turn oven off; let cake stand in oven 2 hrs.
  • Step #18 Remove from oven; cool.
  • Step #19 Pour remaining topping on top; put in the fridge overnight.
