Cajun Smothered Corn Recipe

Ingredients
  • 1 tsp dried basil, crushed .
  • 2 medium garlic cloves, peeled & minced .
  • 4 c frozen corn kernels, thawed .
  • 1/4 tsp cayenne .
  • 1 celery rib, finely minced .
  • 1/2 tsp salt .
  • 1 c canned tomatoes, broken up .
  • 1 small red bell pepper, seeded & minced .
  • 1 tbsp lime juice .
  • 1 c onions, finely sliced .
  • 3 slices bacon, cut in 1/2-inch pieces .
  • 1/4 tsp dried thyme, crushed .
  • fresh ground pepper .
  • 3/4 tsp paprika

Directions
  • Step #1 Put bacon into saucepan, set over med-heat/flame & fry until crisp.
  • Step #2 Remove the bacon with a slotted spoon to a paper towel-lined plate.
  • Step #3 Crumble bacon; set aside.
  • Step #4 Add onion, bell pepper, celery & garlic to pan.
  • Step #5 Saute‚ 3 mins.
  • Step #6 Cover up pan; cook 5 mins.
  • Step #7 Add corn, cayenne, paprika, basil, tomatoes, thyme, salt & pepper.
  • Step #8 Cook over med-heat/flame, stirring often, for 5 mins or until corn is heated through & flavors have mixed.
  • Step #9 Add bacon & lime juice.
  • Step #10 Stir 1 min; serve.
