Ingredients
  • 1 c semi-sweet chocolate chips .
  • 1/2 tsp baking powder .
  • 1/4 tsp baking soda .
  • 3 tbsps sugar, divided .
  • 1 c dried cherries .
  • 1 c slivered almonds, toasted .
  • 2 tsps shortening, divided .
  • 3 eggs .
  • 1 tsp almond extract .
  • 1/2 c butter, softened .
  • 4 (1 oz) white chocolate baking squares .
  • 3 2/3 c all-purpose flour .
  • 1 c sugar, divided .
  • 1 tbsp shortening, divided

Directions
  • Step #1 Separate one egg; set aside.
  • Step #2 In a large mixing bowl, cream butter & 1 c plus 2 tbsps sugar until light & fluffy.
  • Step #3 Beat in remaining eggs & reserved egg yolk.
  • Step #4 Beat in extract.
  • Step #5 Combine flour, baking powder & baking soda; slowly add to the creamed mixture.
  • Step #6 Turn onto floured surface.
  • Step #7 Knead in cherries & almonds.
  • Step #8 Divide dough in half; spape each portion into a 12x3" rectangle.
  • Step #9 Transfer to a greased baking sheet.
  • Step #10 Beat reserved egg white; brush over dough.
  • Step #11 Sprinkle top with remaining sugar.
  • Step #12 Bake at 350F for 28-30 mins.
  • Step #13 Cool 10 mins.
  • Step #14 Transfer to a cutting board; with a serrated knife, cut each rectangle diagonally into 18 slices.
  • Step #15 Place cut side down on greased baking sheet.
  • Step #16 Bake for 20-25 mins, turning once.
  • Step #17 Remove to wire racks to cool.
  • Step #18 In a microwave safe bowl, melt chocolate chips & 1 tbsp shortening; stir until smooth.
  • Step #19 Drizzle over both sides of biscotti.
  • Step #20 Place on waxed paper; let this stand until set.
  • Step #21 Melt white chocolate & remaining 2 tsps shortening; stir until smooth.
  • Step #22 Drizzle over both sides of biscotti.
  • Step #23 Place on waxed paper; set stand until set.
  • Step #24 Store in an airtight container.
