Good News Cafe's Wok Seared Shrimp, Made South Beach-friendly! Recipe

Ingredients
  • 1/2 c olive oil .
  • 1 1/2 c green peas, blanched (can use frozen) .
  • salt & pepper, to sprinkle .
  • 1 c mayonnaise (can use lowfat) .
  • 28 large shrimp, peeled & deveined .
  • 1/2 lemon, juice of .
  • 24 black olives, pitted .
  • 1 large roasted red pepper, sliced (can use preserved) .
  • 1/2 lb green beans, blanched (can use frozen) .
  • Aioli sauce .
  • 1/4 c fresh parsley, sliced .
  • Shrimp .
  • 2 tsps fresh garlic, finely sliced

Directions
  • Step #1 Make the aioli sauce by whisking together mayonnaise & garlic, then whisking in lemon juice.
  • Step #2 Refrigerate.
  • Step #3 Heat oil in a wok or saute pan until very hot.
  • Step #4 Add shrimp & saute 2 or 3 mins.
  • Step #5 Turn shrimp over, & pepper, add garlic, salt, & saute another 2 or 3 mins.
  • Step #6 Add olives, peas, & peppers & saute until hot & well-incorporated.
  • Step #7 Add green beans & stir-fry to finish.
  • Step #8 Drizzle with aioli & serve.
