Strawberry-apple Macaroon Crumble Recipe

Ingredients
  • 1 tbsp sugar .
  • 3 lbs tart apples such as granny smith apples, peeled, cored, & sliced .
  • 2 tbsps lemon juice .
  • 1/4 tsp salt .
  • 2 large egg whites .
  • 1/2 c matzo cake crumbs .
  • 7 oz almond paste (crumbled or grated, I would use a box grater) .
  • 1 lb strawberries, rinsed, hulled, & sliced .
  • 1 1/2 tbsps potato starch .
  • 1 c sugar

Directions
  • Step #1 In the bowl of a food processor/blender or a standing mixer, whirl or beat almond paste & 1 c sugar until well mixed.
  • Step #2 Whirl or beat in egg whites, matzoh cake meal, & salt until well incorporated (mixture will resemble very wet cookie dough).
  • Step #3 In a large bowl, potato starch, lemon juice, strawberries, mix apples, & remaining 1 tbsp sugar.
  • Step #4 Spread fruit mixture level in a shallow 2 1/2- to 3-quart baking dish.
  • Step #5 Pat almond paste mixture evenly over fruit.
  • Step #6 Bake in a 350°F oven until topping is browned & fruit bubbles, 40 to 45 mins.
  • Step #7 Let stand at least 10 mins.
