Pork Loin Chops And Yams In Spicy Orange Sauce Recipe

Ingredients
  • 1/2-1 tsp fresh ground black pepper .
  • 1 1/2 c fresh orange juice .
  • 1/2 tsp red pepper flakes .
  • 1/4-1/2 tsp cumin .
  • 6 boneless pork loin chops, 3/4-inch thick .
  • 1 onion, minced .
  • 3-5 yams .
  • 1 c beef stock .
  • 3 tbsps olive oil .
  • 1 orange, peeled & thinly sliced .
  • 2 tsps orange peel, grated .
  • 1/2 tsp oregano .
  • 1/3 c flour .
  • 2 tsps cornstarch .
  • 2-3 garlic cloves, minced .
  • 1 tbsp garlic powder .
  • 1 tbsp lemon juice

Directions
  • Step #1 Yams: cut into 2" chunks & boil until lightly tender.
  • Step #2 Drain, rinse in cold water, peel & set aside.
  • Step #3 Mix granulated garlic & pepper with flour in plastic bag.
  • Step #4 Dredge pork chops & saute in oil in large pan until lightly browned.
  • Step #5 Remove from pan & set aside.
  • Step #6 In the pan the pork was cooked in, saute onions & garlic until onions are translucent.
  • Step #7 To pan add beef stock, red pepper flakes, orange juice, cumin & oregano.
  • Step #8 Return pork to pan.
  • Step #9 Bring to a boil, reduce heat & let simmer covered for 40 mins, turning pork halfway through.
  • Step #10 Add yams & cover, simmer for another 5 mins.
  • Step #11 Remove pork & yams from pan, set aside & keep warm.
  • Step #12 Whisk together lemon juice, cornstarch & orange peel.
  • Step #13 Pour into pan juices.
  • Step #14 Bring to a boil & let simmer, until thickened, stirring, about 3 mins.
  • Step #15 Return pork & yams to pan.
  • Step #16 Cover up & let simmer for 3-5 mins.
  • Step #17 Plate pork & yams with generous helping of pan juices.
  • Step #18 Garnish with orange slices & serve.
