Basil Chicken Parmigiana Recipe

Ingredients
  • 1/2 c egg substitute .
  • 26 oz pasta sauce .
  • 24 oz chicken breasts .
  • 1 c shredded lowfat mozzarella cheese .
  • 1/4 c sliced fresh basil .
  • 2 tbsps minced fresh Italian parsley .
  • 1 tbsp olive oil .
  • 1/2 c parmesan cheese, divided .
  • 8 oz uncooked rotini pasta .
  • 2/3 c Italian breadcrumbs

Directions
  • Step #1 Prepare pasta according to package directions.
  • Step #2 Cut each chicken breast into 2 pieces.
  • Step #3 Place between 2 sheets of heavy-duty plastic wrap; flatten to 1/4 inch thickness.
  • Step #4 Combine breadcrumbs & 1/4 c parmesan.
  • Step #5 Dip chicken in egg substitute, & dredge in breadcrumb mixture.
  • Step #6 Brown chicken in batches, in hot oil In a large-ish skillet, 1 to 2 mins on each side.
  • Step #7 Remove chicken from skillet.
  • Step #8 Stir together pasta sauce & basil; spoon half of sauce into baking dish.
  • Step #9 Arrange chicken in an even layer over sauce; pour remaining sauce over chicken.
  • Step #10 Sprinkle top evenly with mozzarella cheese & remaining 1/4 c parmesan.
  • Step #11 Bake at 350 for 20 mins or until mozzarella cheese is lightly browned & sauce is bubbly around edges.
  • Step #12 Remove from oven & sprinkle with parsley.
  • Step #13 Serve chicken over hot cooked pasta.
