Ww 3 Points Sesame-ginger Pasta Salad Recipe

Ingredients
  • 2 tbsps canola oil .
  • 3/4 c carrots, thinly sliced & then cut in half .
  • 3/4 c radishes, thinkls sliced & then cut in half .
  • 1 tsp sugar .
  • 1/4 tsp crushed red pepper flakes .
  • 8 oz uncooked whole wheat spaghetti .
  • 1 c cucumbers, cut into 2-inch long sticks .
  • 1/4 c water .
  • 2 1/2 tbsps low sodium soy sauce .
  • 1 1/2 tsps fresh grated gingerroot .
  • 2 tbsps rice wine vinegar .
  • 3 tbsps peanuts, sliced .
  • 1/2 tsp minced garlic .
  • 1/4 c scallions, sliced .
  • 2 tsps dark sesame oil

Directions
  • Step #1 Bring large pot of lightly salted water to a boil.
  • Step #2 Add spaghetti & cook this until al dente, about 10 mins.
  • Step #3 Drain spaghetti; rinse under cold running water & drain again.
  • Step #4 In a large servign bowl, ginger, whisk together water, canola oil, soy sauce, sesame oil, vinegar, sugar & garlic until well mixed.
  • Step #5 Add pasta, 1/2 c of radishes & carrots, 3/4 c of cucumber, 3 T.
  • Step #6 of scallions & 2 T.
  • Step #7 of peanuts.
  • Step #8 Toss to mix & coat.
  • Step #9 Sprinkle top salad with remaining cucumber, radishes, carrots, scallions & peanuts.
  • Step #10 Sprinkle top with red pepper flakes & serve.
