Ingredients
1/2 tsp fresh tarragon leaves, minced .
1/4 c gruyere cheese, freshly grated .
1/2 c dry white wine .
6 mushrooms, sliced thin .
3 tbsps clarified butter .
1/2 lb sea scallops, rinsed, patted dry .
1/2 c heavy cream .
1/4 c flour .
2 shallots, minced .
1/2 lb boneless skinless chicken breasts, cut into 3/4-inch cubes
Directions
Step #1 Spice up chicken & scallops with salt & pepper & dredge them in flour, shaking off the excess.
Step #2 In a large skillet heat clarified butter over high heat until hot but not smoking.
Step #3 In it sauté the chicken & scallops, stirring, for 2 mins.
Step #4 Add shallots & mushrooms & cook the mixture, for 1 min, stirring, or until the sauce coats a spoon.
Step #5 Add wine & reduce it to about 2 tbsps.
Step #6 Add cream & tarragon & cook the mixture, for 1 min, stirring, or until it coats a spoon; add salt & pepper to taste.
Step #7 Divide the mixture between two 7-inch gratin dishes.
Step #8 Sprinkle top Gruyère over the tops & bake dishes in a preheated 375°F oven for 4 to 5 mins, or until the sauce is bubbly.
