Pina Colada Sherbet Recipe

Ingredients
  • 1 c orange juice .
  • 1/4 c light rum .
  • 1 (15 1/2 oz) can cream of coconut .
  • 1 (15 1/4 oz) can crushed pineapple, undrained

Directions
  • Step #1 In a mixer container or food processor/blender bowl mix cream of coconut, undrained pineapple, orange juice, & rum.
  • Step #2 (If using a food processor/blender, process only half of all the ingredients at a time.
  • Step #3 ) Cover up; mix or process until nearly smooth.
  • Step #4 Pour into a 9x5x3-inch loaf dish or a 2-quart baking dish.
  • Step #5 Cover up; freeze about 4 hrs or until firm.
  • Step #6 Break sherbet into pieces.
  • Step #7 Place sherbet, about half at a time, in a mixer container or food processor/blender bowl.
  • Step #8 Cover up; mix or process until fluffy.
  • Step #9 (Or, place this in a chilled bowl & beat with an electric mixer until fluffy.
  • Step #10 ) Return pineapple mixture to pan.
  • Step #11 Cover up & freeze at least 4 hrs or until firm.
