Easy Ginger-lover's Skillet Beef Recipe

Ingredients
  • black pepper .
  • 1 1/4 lbs sirloin beef (partially frozen for easier slicing) .
  • 1/2 c sodium-reduced beef broth .
  • 2-4 tsps vegetable oil .
  • cooked white rice .
  • 6 green onions, sliced .
  • 1-2 tbsp minced fresh garlic (or to taste) .
  • 2 tsps cornstarch .
  • 2 tbsps grated fresh ginger (can use more) .
  • 2-3 tsps soy sauce .
  • 2-3 tsps dried red pepper flakes (optional or to taste)

Directions
  • Step #1 Slice the beef diagonally across the grain into very thin slices.
  • Step #2 Spice up the beef slices with salt & pepper.
  • Step #3 Heat oil in a skillet over high heat; add in ginger & saute for 2 mins or until tan-coloured.
  • Step #4 Add in garlic & red pepper flakes & saute for 30 seconds.
  • Step #5 Add in beef; cook for 2 mins, stirring constantly, then add in soy sauce.
  • Step #6 In a small c or bowl stir this together beef broth & cornstarch until smooth, then drizzle over the beef in the skillet; cook stirring constantly for 1 min or until thickened.
  • Step #7 Add in green onions & cook for another min.
  • Step #8 Spice up with more black pepper if desired.
  • Step #9 Serve over cook rice.
