Lemon And Garlic Chicken Recipe

Ingredients
  • 6 sprigs fresh thyme .
  • 4 chicken leg quarters or chicken breasts, with skin on .
  • 2 unwaxed lemons, quartered .
  • 1 head garlic, cut in half horizontally .
  • 1 tsp of freshly grated gingerroot .
  • 2 tbsps clear honey .
  • 2 tbsps olive oil

Directions
  • Step #1 Squeeze the juice from the lemon quarters into a bowl.
  • Step #2 Add the honey, olive oil & grated ginger & mix well.
  • Step #3 Pour everything into an oven proof dish, which needs to be big enough to hold the chicken in just one layer with a little space between the pieces.
  • Step #4 Add the chicken to the oven dish & turn the pieces well so that all sides are covered with the marinade.
  • Step #5 Leave the chicken skin side down & place the wedges & sprigs of thyme in between the pieces.
  • Step #6 Allow to stand for half an hr.
  • Step #7 Preheat oven to 190°C/375°F/Gas 5.
  • Step #8 Turn the chicken pieces over so that the skin side is up.
  • Step #9 Add the two halves of the garlic bulb to the oven dish in between the chicken pieces.
  • Step #10 Bake in the chicken in the preheated oven for 35 mins if you're using chicken breast or 45 mins if using leg quarters, or until the chicken is fully cooked & the juices run clear.
  • Step #11 Baste the chicken with the juices a couple of times during baking.
