Super Duper Spinach Artichoke Dip Recipe

Ingredients
  • 3/4 c sour cream .
  • 1 1/2 c chicken stock .
  • 2 tbsps chicken bouillon granules .
  • 1 1/2 c heavy cream .
  • 1/4 c olive oil .
  • 6 oz canned artichoke bottoms in water, drained & sliced .
  • 1 tsp sugar .
  • 3/4 c onions, sliced .
  • 1 1/2 tbsps garlic, minced .
  • 1 1/2 tbsps lemon juice .
  • 12 oz frozen sliced spinach, defrosted & drained .
  • 1/2 c flour .
  • 3/4 tsp Tabasco sauce .
  • 3/4 c parmesan cheese, grated .
  • 1 c monterey jack cheese, shredded .
  • 2 tbsps unsalted butter

Directions
  • Step #1 In large saucepan, heat butter & oil over med-heat/flame.
  • Step #2 When butter is melted add onions & cook this until wilted, 3 to 4 mins.
  • Step #3 Add garlic, cook 3 mins.
  • Step #4 Do not brown.
  • Step #5 Sprinkle top in flour & stir continuously for 10-15 mins until golden.
  • Step #6 Slowly wisk in stock & return to simmer.
  • Step #7 Add cream & return to simmer.
  • Step #8 Remove from heat & stir in the parmesan, chicken base, lemon juice & sugar.
  • Step #9 Add sour cream, artichokes, spinach, monteray jack cheese & Tabasco.
  • Step #10 Serve with tortilla chips.
