Makeover Spinach Tuna Casserole Recipe

Ingredients
  • 1 (10 oz) package frozen sliced spinach, thawed & squeezed dry .
  • 1/3 c shredded parmesan cheese, divided .
  • 1/2 c fat-free mayonnaise .
  • 1/2 c sliced white button mushrooms .
  • 2 c nonfat milk .
  • 1/3 c seasoned bread crumbs .
  • 2 tbsps shredded parmesan cheese, divided .
  • 2-3 tsps lemon juice .
  • 2 (6 oz) cans light chunk tuna in water, drained & flaked .
  • 5 c uncooked egg noodles .
  • 2 tbsps butter .
  • 1/4 c all-purpose flour .
  • 1 c reduced-fat sour cream .
  • hot sauce (optional) .
  • 1 (6 oz) package reduced-sodium chicken flavor stuffing mix

Directions
  • Step #1 Cook noodles according to package directions.
  • Step #2 Meanwhile, in a small bowl, mix the sour cream, mayonnaise & lemon juice; set aside.
  • Step #3 In a large saucepan or Dutch oven, melt butter.
  • Step #4 Stir in flour until mixed.
  • Step #5 Gradually stir in the milk.
  • Step #6 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #7 Reduce heat; stir in the 1/3 c Parmesan cheese until melted.
  • Step #8 Remove from the heat; stir in the the sour cream mixture & hot sauce, if using.
  • Step #9 Add the spinach, stuffing mix, bread crumbs, mushrooms & tuna; mix well.
  • Step #10 Drain noodles & place this in a 13"x9" baking dish coated with nonstick cooking spray.
  • Step #11 Top with tuna mixture; sprinkle with remaining Parmesan cheese.
  • Step #12 Cover up & bake this at 350° for 35 mins.
  • Step #13 Uncover; bake 5-10 mins longer or until lightly browned & heated through.
