Sweet Potato Cheesecake With Praline Topping Recipe

Ingredients
  • 1 c sweet potato puree .
  • 1 tbsp butter .
  • Filling .
  • 3 tbsps sugar .
  • 1/4 tsp nutmeg .
  • 1/4 c unsalted butter, melted .
  • 3 large eggs .
  • Praline Topping .
  • 2 tbsps brown sugar, packed .
  • 1/2 tsp salt (optional) .
  • 2 tsps pure vanilla extract .
  • 1/4 tsp ground ginger .
  • 1/2 c pecan halves .
  • 1 lb cream cheese, at about room temp .
  • 1 3/4 c graham crackers or gingersnap crumbs .
  • 1 tsp ground cinnamon .
  • Crust .
  • 3/4 c light brown sugar, packed .
  • 1 pinch salt

Directions
  • Step #1 Crust:.
  • Step #2 Butter 9-inch springform pan.
  • Step #3 In medium-size bowl, mix crumbs, sugar & salt.
  • Step #4 Drizzle with butter; stir until dry ingredients are evenly moist.
  • Step #5 Pour into prepared pan; pat even layer of crumbs over bottom of pan & up sides.
  • Step #6 Refrigerate 30 mins.
  • Step #7 Preheat oven at 350 degrees.
  • Step #8 Filling:.
  • Step #9 In large bowl, using electric mixer, beat cream cheese at medium speed until creamy.
  • Step #10 Scrape down sides with rubber spatula.
  • Step #11 With mixer running add light brown sugar, cinnamon, nutmeg, ginger, salt, & vanilla.
  • Step #12 Add eggs one at a time, beating after each.
  • Step #13 Blend in sweet potatoes.
  • Step #14 Scrape filling into chilled crust; smooth top.
  • Step #15 Bake at 350 degrees until set, about 40 mins.
  • Step #16 Let cool on wire rack.
  • Step #17 Topping:.
  • Step #18 Coarsely chop pecans.
  • Step #19 In small skillet, melt butter.
  • Step #20 Add pecans; sprinkle with sugar.
  • Step #21 Cook, stirring until sugar melts & nuts are toasted & caramel-coated; let cook briefly.
  • Step #22 Spoon mixture around edge of cheesecake.
  • Step #23 Refrigerate until time to serve.
