Australian Squares Recipe

Ingredients
  • 1/4 c brown sugar, firmly packed .
  • 1/4 c brown sugar, firmly packed .
  • 1 egg yolk .
  • 1 egg white .
  • 1 tsp vanilla .
  • 1 c semisweet chocolate morsels .
  • 1 c flour, sifted alternately with 1/4 c water .
  • 1 tbsp lemon rind, grated .
  • 1/2 c butter

Directions
  • Step #1 Preheat oven to 375°F.
  • Step #2 Combine butter, 1/4 c brown sugar, lemon rind, & vanilla & mix well.
  • Step #3 Beat in the egg yolk.
  • Step #4 Add the flour mixture & the chocolate.
  • Step #5 Beat the egg white until stiff but not dry.
  • Step #6 Beat in 1/4 c brown sugar slowly till stiff & glossy.
  • Step #7 Fold into semi-sweet mixture.
  • Step #8 Pour in waxed paper-lined 8" square pan & bake this at 375 F for 25 to 30 mins.
  • Step #9 Sprinkle top confectioners' sugar over top while warm, if desired.
  • Step #10 Cool & cut in 2" squares.
