Step #1 All vegetables go in it, cabbage, sweet potato, ladies fingers, except perhaps, beetroot (it stains the dish), onion, some mushy vegetables, cauliflower, radish, turnip, like, etc.
Step #2 Usually used are drumstick,Cucumber,String beans, Raw plantain, Brinjal,Potato,Yam,Ash gourd.
Step #3 Wash & cut all the vegetables lengthwise into 2" pieces(stick shape).
Step #4 Boil the vegetables until just done, with turmeric powder & salt.
Step #5 One should be careful not to overcook the vegetables: they should remain crisp.
Step #6 (There are some vegetables which cook very fast & some which take a long time.
Step #7 Keep adding the vegetables to the boiling water according to the cooking time, the longer cooking vegetables first & the quicker ones last).
Step #8 Grind the coconut with green chillies, without using water.
Step #9 Drain the vegetables.
Step #10 Put them in a wide mouthed large pan in mild heat, add the coconut mixture, curry leaves & coconut oil & carefully toss for few mins, beaten curds, until all the vegetables are coated with coconut & coconut oil.
Step #11 If using a spoon, be careful not to mash the vegetables.
