- salt & pepper .
- 2 medium onions, sliced .
- 1 (46 oz) can tomato juice .
- 1 pint light cream .
- 1 (28 oz) can whole tomatoes .
- lemon juice .
- 2 bay leaves .
- 1 (8 oz) package cream cheese .
- 4 tbsps butter
Directions
- Step #1 Saute the onions & garlic in the butter until soft.
- Step #2 Add the tomatoes, tomato juice, & bay leaves; simmer for 20 mins.
- Step #3 Remove from heat & let cool.
- Step #4 Drain the tomatoes, reserving the juice, & puree them in a mixer or food processor/blender with the cream cheese.
- Step #5 Mix the puree with the reserved juice.
- Step #6 Add the light cream & season to taste with salt, pepper, & lemon juice.
