Tomato Bisque Recipe

Ingredients

2 large garlic cloves, minced .
salt & pepper .
2 medium onions, sliced .
1 (46 oz) can tomato juice .
1 pint light cream .
1 (28 oz) can whole tomatoes .
lemon juice .
2 bay leaves .
1 (8 oz) package cream cheese .
4 tbsps butter

Directions

Step #1 Saute the onions & garlic in the butter until soft.
Step #2 Add the tomatoes, tomato juice, & bay leaves; simmer for 20 mins.
Step #3 Remove from heat & let cool.
Step #4 Drain the tomatoes, reserving the juice, & puree them in a mixer or food processor/blender with the cream cheese.
Step #5 Mix the puree with the reserved juice.
Step #6 Add the light cream & season to taste with salt, pepper, & lemon juice.
