Tomato Bisque Recipe

Ingredients
  • 2 large garlic cloves, minced .
  • salt & pepper .
  • 2 medium onions, sliced .
  • 1 (46 oz) can tomato juice .
  • 1 pint light cream .
  • 1 (28 oz) can whole tomatoes .
  • lemon juice .
  • 2 bay leaves .
  • 1 (8 oz) package cream cheese .
  • 4 tbsps butter

Directions
  • Step #1 Saute the onions & garlic in the butter until soft.
  • Step #2 Add the tomatoes, tomato juice, & bay leaves; simmer for 20 mins.
  • Step #3 Remove from heat & let cool.
  • Step #4 Drain the tomatoes, reserving the juice, & puree them in a mixer or food processor/blender with the cream cheese.
  • Step #5 Mix the puree with the reserved juice.
  • Step #6 Add the light cream & season to taste with salt, pepper, & lemon juice.
