Italian Tomato Bread Soup Recipe

Ingredients
  • 4 tbsps pesto sauce .
  • 2 (15 oz) cans white beans .
  • 1 (28 oz) can tomatoes, crushed .
  • 1/4 tsp pepper .
  • 1 large onion, finely sliced .
  • 1 (15 oz) can tomatoes, sliced .
  • 6 garlic cloves, sliced .
  • 1 quart chicken stock .
  • 4 c stale bread, torn .
  • 1/2 c parmesan cheese, grated .
  • 3 tbsps extra virgin olive oil .
  • 1/2 tsp salt .
  • 4 tbsps parmesan cheese, grated .
  • 4 tbsps onions, finely sliced

Directions
  • Step #1 Heat large soup pot over med-heat/flame.
  • Step #2 Add olive oil.
  • Step #3 Add onions, cook 5 min.
  • Step #4 Add garlic, cook 3 min.
  • Step #5 Add tomatoes, season this with s & p.
  • Step #6 Add stock & increase heat until soup bubbles.
  • Step #7 Reduce heat to simmer & add beans & bread.
  • Step #8 Stir soup until it thickens to a stew-like consistency.
  • Step #9 Turn of fheat, check for seasoning & ladle into shallow bowls.
  • Step #10 Top with pesto, parmesean, fresh onions & a drizzle of EVOO.
