Wild Rice Frittata Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 c shredded swiss cheese, divided .
  • 1 small red pepper, sliced .
  • 1/4 c milk .
  • 1 tbsp margarine or butter .
  • 1 c cooked wild rice .
  • 6 eggs, beaten .
  • 1 small green pepper, sliced

Directions
  • Step #1 Melt margarine in 10-inch nonstick skillet over med-heat/flame.
  • Step #2 Cook peppers & onion in margarine, stirring frequently, until vegetables are crisp-tender.
  • Step #3 Mix eggs, milk, wild rice & 1/2 c of the cheese.
  • Step #4 Pour egg mixture over vegetables; reduce heat.
  • Step #5 Cover up & cook 15-20 mins or until eggs are set; remove this from heat.
  • Step #6 Sprinkle top with remaining 1/2 c cheese.
  • Step #7 Cover up & let this stand 5 mins or until cheese is melted.
  • Step #8 Serve as soon as possible.
