100 oz sliced tomatoes (3 jumbo cans, 1 smaller regular sized can, you can drain them or not, I drained mine to keep it chun) .
4 tsps minced garlic (or to taste) .
1 orange bell pepper (sliced) .
1 1/4 c white vinegar .
1 tsp kosher salt .
1 red pepper (sliced) .
4 jalapenos (for medium spiced salsa keep 2 with seeds & ribs, the other two remove all ribs & seeds- sliced) .
1/4 c honey (or to taste) .
2 (15 oz) cans tomato sauce .
2 (6 oz) cans tomato paste .
2 (16 oz) bags sliced peaches (sliced into small pieces) .
1 whole lime, juice of .
1 tsp cayenne .
1 yellow pepper (sliced) .
4 tbsps fresh cilantro (or desired amount- i used about 10 pieces of fresh- riped into tiny pieces, so im guessing that is a)
Directions
Step #1 Mix all ingredients In a large-ish pot- cook this until desired thickness & onions have lost some of their color & become slightly translucent.
Step #2 I also took a potato masher & slightly mashed the salsa to keep it chunky yet add some smoothness to it as well.
Step #3 Ladle into jars & viola -- peach salsa bliss (let this stand for 15 min, place lids on & put into refrigerator).
Step #4 Keep put in the fridged after opening.
