Step #1 Sift flour & bicarbonate of soda,
Add milk & sugar,
Make a hole in the centre of the flour,
Break eggs into large jug, beat with a fork until mixed.
Step #2 Gradually whisk the milk mixture into the flour until smooth.
Step #3 Cover up the bowl with plastic wrap & put in the fridge for 30 mins.
Step #4 Put 1/2 tsp of butter in a frying pan, turn heat up to medium.
Step #5 Fill a 1/4 c with mixture, when butter is melted pour the batter into the pan.
Step #6 Cook the hotcake for about 2 mins or until it is just set around the edge & small bubbles have burst on the surface.
Step #7 Using an egg slice, turn the hotcakes over & cook for another 2 mins or until the other side is lightly browned.
Step #8 Serve with maple syrup, lemon curd, chocolate spread, jam --.
