Pea, Feta And Mint Frittata Recipe

Ingredients
  • olive oil (for frying) .
  • 100 g feta, crumbled .
  • 6 eggs, beaten & seasoned .
  • 6 spring onions, finely sliced .
  • 150 g frozen peas, defrosted .
  • 1/2 c shredded mint leaves

Directions
  • Step #1 Fry the spring onions in the olive oil until softened.
  • Step #2 Add all the other ingredients & cook this until mostly set but a little runny on the top.
  • Step #3 Finish the top by flipping the fritatta or placing under a hot grill until the top is brown & crispy.
  • Step #4 Cut into wedges & serve this with a salad.
