Chicken Diane Style Recipe

Ingredients
  • 8 skinless, boneless chicken breast halves
  • 1/2 c chicken broth
  • 1 lb fresh mushrooms
  • 2 tsps sliced fresh chives
  • 2 small onions, sliced
  • 2 tsps dried parsley
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 c brandy
  • 1/2 tsp ground black pepper
  • 2 tbsps prepared Dijon-style mustard

Directions
  • Step #1 Saute onions & mushrooms in a large skillet over med-heat/flame.
  • Step #2 Remove onion/mushroom mixture from skillet & reserve; add chicken breasts to skillet.
  • Step #3 Saute for 4 mins, then turn over & add mushroom mixture on top.
  • Step #4 In a small bowl mix salt, paprika, pepper, chives & parsley together then sprinkle mixture over chicken.
  • Step #5 In a medium bowl mix the broth, brandy & mustard & mix together.
  • Step #6 Pour over chicken, reduce heat to low & let simmer for 20 to 25 mins or until chicken is cooked through (no longer pink inside).
